text-align: center;">Nella planetaria unire farina, lievito sbriciolato, zucchero, mescolare bene poi aggiungere il latte freddo, le uova, lo strutto o burro, le scorze d'arancia</div><div class="separator" style="clear: both; text-align: center;"> e per ultimo il sale.</div><div class="separator" style="clear: both; text-align: center;">Fare incordare bene e mettere a lievitare per circa 3 ore fino al raddoppio.</div><div class="separator" style="clear: both; text-align: center;">Dopo 15 min girare e dare una piega e dopo altri 15 min.. ripetere l 'operazione.</div><div class="separator" style="clear: both; text-align: center;">A questo punto prendere l'impasto e, sul piano infarinato,</div><div class="separator" style="clear: both; text-align: center;"> arrotolarlo e dare le classiche pieghe.</div><div class="separator" style="clear: both; text-align: center;">Ora bisogna dividere l'impasto pesandolo io ho fatto 9 palline da 40 gr. che ho messo negli stampi da mini plumcake e 13 palline da 50 gr. </div><div class="separator" style="clear: both; text-align: center;">che poi ho cotto negli stampi da muffin.</div><div class="separator" style="clear: both; text-align: center;">Per ogni pezzo, stendere con le mani, arrotolare su se stesso formando un cordoncino, arrotolare da un'estremità all'altra poi col palmo della mano formare una pallina dalla superficie liscia.</div><div class="separator" style="clear: both; text-align: center;">Allungare con il palmo della mano e trasferire le palline negli stampini imburrati e infarinati.</div><div class="separator" style="clear: both; text-align: center;">Lasciare lievitare bene. Nel frattempo preparare la glassa unendo tutti gli ingredienti in un mixer e frullare. Trasferire il composto in una sac a poche con il beccuccio piatto e mettere da parte.</div><div class="separator" style="clear: both; text-align: center;">Quando i Buondì saranno ben lievitati spennellare la superficie con l'emulsione di latte e tuorlo .</div><div class="separator" style="clear: both; text-align: center;">Ricoprire con uno strato di glassa e le codette di zucchero.</div><div class="separator" style="clear: both; text-align: center;">Cuocere in forno statico preriscaldato a 180° per circa 15-20 min.</div><div class="separator" style="clear: both; Aggiungere la gelatina precedentemente ammollata in acqua fredda e far sciogliere bene ma non far bollire. Riporre in frigo.</div><div class="separator" style="clear: both; text-align: center;">Sciogliere il lievito di birra nell'acqua tiepida e mettere da parte. Nella planetaria mettere la farina, il burro morbido e lo zucchero. Iniziare a lavorare il composto fino a che il burro non è stato assorbito quindi aggiungere l'acqua con il lievito poco alla volta, il marsala e tutte le spezie, infine una bella presa di sale. Dopo averlo ben impastato coprilo e lasciarlo lievitare fino al raddoppio. Prelevare quindi l'impasto e dividerlo in pezzature da 50 gr. , fare dei filoncini che arrotolerete fino a formare delle chiocciole chiudendole bagnando con acqua. Lasciare lievitare ancora un ora coperto da pellicola. Cuocere a 180° forno statico per circa 25 minuti. Una volta freddi tagliare la calotta superiore togliere un po di mollica per creare un incavo, bagnare con il marsala sopra e sotto quindi farcire con la crema di ricotta e riposizionare la calotta. Far raffreddare in un contenitore con la pellicola a contatto diventerà un impasto malleabile. Frullare le mandorle ed aggiungere i datteri ovviamente senza nocciolo continuando a frullare. Con il composto fare dei salamini del diametro di 2 cm. circa impanarli nel sesamo. Con il manico di un cucchiaio di legno schiacciando realizzare un incavo nel centro del cilindretto. Sciogliere il cioccolato bianco e colarlo nella fessura riempiendo lo spazio. Con il cioccolato fondente fuso fare dei fili sottili paralleli da una parte all'altra distanziati mezzo cm. Con uno stuzzicadente tirare e formare il decoro. Riporre in frigo a solidificare e poi tagliare a quadrotti. Fare un panetto e riporre in frigo a rassodare almeno 6 ore meglio tutta la notte.</p><p style="text-align: center;">Per la crema frangipane nella planetari con la frusta montare il burro morbido con lo zucchero , aggiungere le uova una per volta sempre montando e poi la farina di mandorle. Resterà un composto morbido.</p><p style="text-align: center;">Imburrare e infarinare lo stampo e stendere la frolla circa mezzo cm.</p><p style="text-align: center;">Bucherellare il fondo quindi stendere la marmellata di mele.</p><p style="text-align: center;">Utilizzando una sac a poche ricoprire di crema frangipane .</p><p style="text-align: center;"> Tagliare le 2 mele a fettine e ricoprire l'impasto. </p><p style="text-align: center;">Ricoprire con mandorle a lamelle ( io tritate grossolanamente ) e infornare a 175° statico nel ripiano più basso del forno per circa 45-50 min.</p><p style="text-align: center;"> a me ci è voluta quasi un ora. </p><p style="text-align: center;">Non vi dico il profumo che ha invaso tutta la casa.</p><div class="separator" style="clear: both; Formare delle palline di circa 15 gr. e sistemarle su una teglia ricoperta da carta forno appiattendole leggermente. Cuocere nel forno ventilato a 180° C per circa 15 min. Una volta pronti lasciarli raffreddare. Fare delle palline con l'impasto e posizionarle distanziate sulla placca rivestita di carta forno, a me ne sono venute 23 da 20 gr. Cuocere a 180° ventilato per circa 10 min. Appena sfornati sembreranno ancora crudi ma vanno bene così una volta freddi si compatteranno.</div>

Montate bene il burro morbido con lo zucchero fino a che diventa crema, aggiungete l'uovo, la buccia del limone, la polpa di zucca, le farine setacciate con il lievito. L'impasto non deve essere troppo morbido, regolarsi con la farina. Riponete in frigo per almeno un'ora, si deve compattare un pò. Dopodichè prendete un po di impasto, metteteci al centro un pezzetto di cioccolato, formate una pallina e rotolatela nello zucchero a velo.</div>

La sera prima mescolare i semi di chia con il latte,</div>

In una ciotola mescolare farine e lievito. In un'altra ciotola unire il latte con i semi, la polpa di mele, lo sciroppo d'agave e l'olio, mescolare con una frusta e versare sulle farine. Una volta ottenuto un composto omogeneo inserire il cioccolato tritato a piacere, io l'ho omesso. Versare in uno stampo rivestito di carta forno e cuocere a 180°C, ventilato per circa 35-40 min.,</div>

Una parte l'ho sbriciolata e mescolata con un po di marmellata di castagne, ho fatto delle palline che poi ho rotolato nel cacao amaro. L'altra l'ho tagliata a cubotti, divisa a metà e farcita con la marmellata di castagne poi l'ho rotolata nello zucchero di canna.</div>
